Ingredients:  
- 1 lb - boneless skinless chicken meat - about 2 whole breasts - cubed
- 1 tbsp - olive oil
- 1 cup - salsa
- 2 cups - chicken stock
- 1 cup - brown rice - if using brown minute rice - use 1 1/2 cups rice
- 2 cups - frozen corn kernels - leave out allow to thaw while preparing
- 1/2 - red pepper - chopped
- sour cream, grated cheddar cheese for garnish

Directions:

- in an electric frying pan heat oil
- add chicken, cook until slightly browned
- add broth, salsa, rice bring to a boil
- cover simmer 20 minutes, in last five minutes add corn and pepper
- when all liquid is absorbed it is ready
- serve with sour cream, cheese

* when using regular brown rice you may need a little extra liquid.
