4 cups steamed white rice
1 lb giblets cooked, then chopped very fine
1/3 lb lean pork sausage
2 stalks of celery, chopped fine
2 medium onions, chopped fine
3 eggs, beaten
1 Tablespoon Bell's Poultry Seasoning
salt and pepper to taste
2 cups broth from the giblets or chicken broth

Brown sausage. Saute onions and celery in the drippings. Mix together with remaining ingredients in a buttered casserole. Bake at 375º until bubbly and a good crust forms on top.

If giblets don't work for you, try increasing the sausage to 1 1/4 lb. and omitting the offending organs. Always when broth is called for, I use Kitchen Basics stock in a box.
