1 1/2 c. chopped zucchini
1/2 c. chopped onion
1/4 c. grated Parmesan Cheese
1/3 c. shredded Cheddar Cheese
3 eggs
1 1/2 c. Skim Milk
3/4 C. Bisquick Baking Mix
1/4 C. black pepper
1 tsp. dried parsley flakes
Directions:
Directions:
Preheat oven to 400º. Spray a 10" deep dish pie plate with cooking spray. Evenly layer zucchini, and onion into pie plates. Sprinkle cheeses evenly over vegetables. Beat together remaining ingredients, and pour evenly over top. Bake for 30 minutes until knife inserted in the center comes out clean.
