8 to 10 small to medium potatoes
1 to 2 eggs, hard boiled
1 medium onion, finely chopped
1 whole dill pickle, chopped
1 carrot, finely chopped in food processor
1 to 2 medium stalks celery, chopped
1/2 tablespoon mustard
3/4 cup mayonnaise
salt to taste

Boil potatoes with skins on and eggs until cooked through. Cut potatoes into bite-sized pieces and chop hard-boiled eggs. Add onion, pickle, carrot, celery, mustard, mayonnaise, and salt. Mix together, correct the seasoning, and chill for at least two hours.
