7 Cloves Garlic

With a sharp knife, poke blade around leg at several locations and stuff garlic into these holes. Season lamb with plenty of salt, pepper and garlic powder. Roast in a roasting pan until done (inner temperature 180 º). Remove and allow to rest 5 minutes before slicing and serving.

This was a Carroll family favorite, especially for Easter. My grandpa Al and my dad both prepared their leg of lamb like this. Serve this with Grandpa Al's Chili sauce for an authentic Carroll meal. "Grandma's Homemade Chili Sauce" will do as an adequate substitute.

When buying lamb, make sure to remove (or have the butcher remove) the Hock Gland in the leg. This gland when cooked releases a pungent flavor to the meat and is the reason most people don't like lamb. I assure you that the reason most people who don't like lamb is because this gland was not removed before it was cooked.
