1/2 c chopped onions
3 tbs. pure veg. oil
1/3 c flour
1/2 tsp salt
1/8 tsp pepper
Beef (1 slice) round or chuck, 1 1/2 - 2 " thick
2 tbs. prepared mustard
1 tbs. tomato paste
1 tbs Worcestershire sauce
dash liquid hot-pepper seasoning
1 can (10oz.) onion soup
1/2 water

Directions:
Saute onion in hot oil in heavy kettle or dutch oven until soft. Mix flour, salt and pepper; pound into both sides of beef. Brown beef well on both sides in oil remaining in kettle. Add mustard, tomato paste. Worcestershire, hot pepper seasoning, onion soup, and water. Cover; simmer 2- 21/2 hours or until meat is tender when pierced with a fork. Remove meat to heated platter. Skim fat from gravy . Thicken gravy if desired, with flour mix to a smooth paste with a small amount of water.
