Hickory or fruitwood chips
2 lbs unpeeled fresh jumbo shrimp
Marinade: 1 (6 oz) can frozen orange juice concentrate, thawed, undiluted and divided; 1/4 c honey; 2 Tbsp water; 1 Tbsp chopped fresh basil; 1 Tbsp fresh thyme

Soak wood chips in water at least 30 minutes
Peel shrimp and devein. Place shrimp in a shallow dish or heavy-duty zip-top plastic bag.
Combine 1/4 c juice concentrate, honey, and next 3 ingredients and pour orange juice mixture over shrimp, stirring to coat. Cover or seal, and refrigerate 1 hour.
Prepare charcoal fire in smoker and let burn 15-20 minutes (May use charcoal grill or gas grill with wood chip tray). Drain chips and place on coals. Place water pan in smoker or grill and add remaining juice concentrate to pan. Remove shrimp from marinade and pour marinade into water pan.
Thread shrimp on skewers and place on racks. Cover.
In smoker -takes about 45 minutes. On grill, check when translucent shrimp turns white.
