New York Steak (Thick cut)

Tri-Tip Steak (Whole brisket)

Get the grill hot (+500º), sear for 7 minutes, 3½ minutes on each side. Cover with foil for 5 minutes, then serve.

For the Tri-Tip, grill over 400º coals for 7 minutes, then flip for another 7 minutes. Do this twice for a total of 14 minutes on each side. Cover with foil for 5 minutes, slice across the grain. This will produce a nice rare piece of meat. If you want it closer to medium, cook each side an additional 3-5 minutes for a total of 20 minutes on each side. Be careful not to over cook.

Season the meat with seasoned salt, salt and pepper on one side only. I prefer to do it when I initially place the meat on the grill. Add one small slice of butter to the steak when you remove the meat prior to covering with the foil. Don't use butter if the meat was marinated. Also cut back on spices or delete all together if meat is marinated.

The steaks will be medium rare for both of these recipes. The meat should be at room temperature, but straight out of the refrigerator will be fine. If the meat is still slightly frozen, the meat will be rare in the center.
