4-5 Boneless skinless chicken breast - cubed
1/2 c milk
1/2 c cooking sherry
salt and pepper
1 1/2 c flour
1 tsp baking powder
4 tsp olive oil
3/4 c water (reserving 3 tbsp for corn starch roux)
1 tbsp corn starch
1/2 c honey
1/3 c soy sauce
1 tbsp Rice Vinegar
1 tbsp grated ginger
1/2 tbsp ground chipotle pepper
1 tbsp sesame seed oil

Directions:

Cube the chicken and place in bowl. Add, milk, sherry, salt and pepper to bowl and coat chicken. Refrigerate 1 hour. Drain with out drying

Mix flour and baking powder then coat the cubes liberally. Heat oil in non-stick frying pan. Saute the chicken over medium heat, rotating once during cooking. Cook until crusty and brown. Remove and drain.

Pour the water and diluted cornstarch in large skillet. Add soy sauce, honey, rice vinegar, chipotle pepper and ginger. Bring to quick boil and thicken sauce. Add the sesame oil and test for taste. Adding more soy or salt or pepper as needed. Finally remix the chicken in the sauce. If storing for later date, skip this step until you are ready to serve. Chicken will get soggy.
