4 Tbls butter
3/4 cup dried bread crumbs
3/4 tsp salt
1/8 tsp pepper
3 Tbls prepared mustard
2 Tbls honey
1 tsp lemon juice
1/2 tsp ground ginger
1 garlic clove - crushed
8 medium chicken thighs (2 lbs)

Combine bread crumbs, salt and pepper. In large bowl, combine mustard, honey, lemon juice, ground ginger and garlic. Add chicken and coat with mixture. Then coat thighs with bread crumb mixture. Bake at 425º for 35 minutes.

This is an awesome chicken recipe. I like to marinade the chicken in the mixture for at least 4 hours before coating with bread crumbs. It adds a lot of flavor to the chicken.

For a lower fat/calories I take the skin off the thighs. It does not alter the recipe in any way. I think it may even help to thoroughly season the chicken.
