8oz fresh sliced mushrooms
4 large boneless/skinless chicken breast halves
2 eggs, beaten
1 cup bread crumbs
2 Tbls butter
6oz mozzarella cheese
3/4 cup chicken broth

Directions:
Directions:
Place half of sliced mushrooms in a baking dish. Dip chicken into egg and roll in bread crumbs. Melt butter in skillet and brown chicken on both sides. Place on top of sliced mushrooms. Cover with remaining mushrooms and top with cheese. Add chicken broth to pan. Bake at 350º for 30-35 minutes.

Good served over cooked rice or noodles.
