4 Fresh Rock Fish Fillets (or Firm White Fish)
1 T. Butter
1 T. Olive Oil
1 Egg
Dash of Milk
Seasoned Salt
1 Green Onion (chopped)
1 Lemon

Directions:
Directions:
Place butter and olive oil in fry pan and begin to heat. In a bowl, combine egg and milk, whisk vigorously. Dip fish fillets in egg mixture and place into hot pan with butter and olive oil. As the fillet sautes, sprinkle with seasoned salt to taste. Turn fish and when almost done sprinkle with chopped green onion. Serve with fresh lemon wedges.
