2 1/2 lb fryer, cut up
salt and pepper
Self-rising flour
Crisco Shortening

Dump a couple of cups of the self-rising flour into a large paper bag. Season the chicken liberally with salt and pepper, then drop them into the flour. Toss them until completely coated. Arrange pieces on a baking sheet and allow them to rest for approximately 20 minutes. Heat shortening to 350º. You will need enough hot shortening to emerse the chicken half way. Place the chicken in the hot grease. Cook pieces covered for about 10 minutes. Uncover and cook about 10 minutes more per side until the juices run clear when pierced with a fork. Do not crowd the pan because this causes the temperature of the hot grease to drop. Be patient and don't let that hot grease pop on your tender parts. Salt and pepper once more as cooked chicken drains on paper towels or brown paper bags. Serve!
