1 pkg frozen chopped spinach, thawed and squeezed dry
1 1/3 cup cottage cheese
1 egg
1/3 cup grated Parmesan cheese
1/2 cup mozzarella cheese grated
1/2 small onion, minced
2 tsp Dijon mustard
3/4 tsp coarse black pepper
1/4 tsp salt
1 tsp dried oregano
1 jar of pasta sauce
1 cup water
18 cannelloni tubes (pre-cooked)
grated mozzarella cheese

Directions:
Preheat oven at 375'F. Combine first 10 ingredients in a bowl and mix well. Combine sauce and water; pour 1 c on bottom of a sprayed shallow baking dish. Stuff spinach mixture into cannelloni tubes; place tubes in a single layer on top of sauce. If there is any filling left, spoon around shells. Pour remaining sauce over top of the tubes, covering completely. Cover tightly with foil, bake about 50 minutes. Remove from oven. Discard foil and sprinkle mozzarella cheese (as much as desired) over casserole. Return to over for about 10 minutes. Let stand for 5 minutes before serving.
