8-10 red potatoes, 1"chop
1/2 cup warm milk
1/4 cup butter
1/4 cup cream cheese (optional)
salt and pepper to taste
1 can corn, drained
1 can green beans, drained or 1 cup peas
1 lb lean ground beef or ground turkey
1 med yellow onion, diced
2 T flour
1 c beef stock (Kitchen Basics, stock in a box)

For this layered dish, prepare mashed potatoes first. Start chopped potatoes in cold water to cover. Boil them until fork tender. Drain. Whip the potatoes with warm milk, butter, cream cheese, salt and pepper. Set aside.
Brown the ground beef and onion. Drain any excess grease. Make a slurry with the flour and stock. Pour over meat mixture and stir until a bit thickened. Taste, and adjust flavor with salt and pepper. Place this mixture in the bottom of an oven proof casserole dish. Layer green beans next, followed by corn. Top with mashed potatoes. Bake the layered casserole at 350º for 30 mins.
