1 red or yellow onion, sliced in 1/8" strips
2teaspoons olive oil
2teaspoons flour
1 qt. chopped tomatoes with juice
1 1/2 Tablespoons Cajun seasoning (Joe's Stuff from New Orleans School of Cooking)
1 bay leaf
steamed white rice

Directions:
In a cast iron frying pan, saute onion in oil over medium heat until caramelized. Stir in flower and continue stirring for two minutes. Add remaining ingredients. Bring to a boil, then lower the heat and simmer slowly for 45 minutes. Serve over hot steamed rice with salmon patties or fried ham steaks.
