2 lb. Flank Steak
1/2 t. Salt
1/4 t. Pepper
1 t. Dijon Mustard

1 Box Stove Top Stuffing

3 Strips of Bacon (cubed)
2 Small Onions
1 c. Beef Broth

1 t Dijon Mustard
2 T. Catsup

Directions:
Directions:
Lightly salt and pepper steak on both sides. Spread one side with mustard.

Prepare stuffing. Spread on mustard side of steak. Roll steak up like a jelly roll, tie with string.

Cook bacon in a Dutch oven or heavy casserole dish. Add meat roll and brown on all sides, approximately 10 minutes. Add onions and saute another 5 minutes. Pour in beef broth, cover and simmer for 1 hour. Remove meat to preheated oven and keep warm. Season pan juices with mustard, salt and pepper to taste, stir in catsup. Slice meat and serve with gravy.
