Dressing:
1 cup sugar
1 Tbls flour
1/2 tsp ground mustard
1/3 cup white vinegar
2/3 cup cold water
1 egg lightly beaten

Salad:
1 bag baby spinach
6-8 slices cut cooked bacon
3 chopped/sliced hard boiled eggs
Red onion (optional)

Dressing:
Add sugar, flour and mustard in saucepan. Gradually add water and vinegar. Bring to a boil and stir until slightly thickened. Remove from heat. Add small amount of hot dressing to beaten egg. Slowly add egg to rest of dressing and return to heat. Bring to a gentle boil. Toss with spinach while still warm. Top salad with bacon, egg and onion.

This salad is always popular and so easy to make. I have also served with sliced strawberries and mandarin oranges. If you do not wish to make the dressing and serve warm - Poppyseed dressing would also work nicely with this salad.
