1 cup Cracklings finely cut
1 1/2 cups yellow or white cornmeal
3/4 cup whole-wheat flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 egg
1-cup buttermilk or sour milk (see note)

Directions:
Directions:
Preheat an oven to 400 degrees F. Grease a 9-inch cast-iron skillet or 8-inch baking or pie pan. In a bowl stir together the cracklings, cornmeal, flour, baking soda, and salt. In another bowl, beat the egg and stir in the buttermilk. Stir the wet ingredients into dry ingredients. Pour into the prepared skillet or pan. Bake until lightly browned on top, 20-25 minutes. Let rest a few minutes before cutting into wedges. Serve hot.

To make sour milk, stir 1 tablespoon distilled white vinegar into 1 cup milk and let stand 30 minutes at room temperature.
