2 lbs. beef
1 onion (chopped)
1 can (15 oz.) black beans ( drained and rinsed)
1 Tbsp. chili powder
2 tsp. cumin
1/2 tsp. salt
4 flour tortillas ( cut into 1" strips)
1 can cream of mushroom soup
1 can (10 oz.) diced tomatoes and green chiles (undrained)
1 cup (4 oz.) shredded cheddar cheese

Directions:

Preheat oven to 350
Cook beef and onion in skillet. Add beans, chili powder, cumin, and salt to beef. Place in greased 13x9 pan. Put sliced tortillas over beef. Combine soup and tomatoes and pour over tortillas. Sprinkle with cheese, bake uncovered for 25-30 minutes.
