6 slices bacon
1/2 cup flour and 1/2 cup corn meal
Calf Liver about 6 oz.

Fry bacon until crisp then crumble them. Set aside. Wash liver and drain on paper towels. Mix corn meal and flour with salt. Coat liver with this mixture until very well coated.
Using bacon grease, fry liver until brown. (No red oozes when pressed with a fork). Put liver on plate. Pour off most of grease. Add left over corn meal and flour to grease. Add water until consistency is thick like gravy. Put liver in sauce and add onions. Simmer 1 hour. Add water if it is too thick. Cover for best results.
