1/3 cup uncooked rice
2 cups milk
2 eggs
2 tablespoon margarine
3/4 cup brown sugar
1/2 teaspoon vanilla

Directions:
Directions:
Wash rice; drain and pour into top of double boiler with milk and cook over boiling water, stirring often with a fork for an hour. Just before rice is done, separate eggs and beat yolks slightly. Remove from fire; add margarine and very slowly the yolks. Mix brown sugar with an additional 1/4 cup milk or cream along with vanilla and add to rice. Set aside to cool. While cooling, beat egg whites stiff enough to stand in peaks and fold gently into mixture. Pour into greased casserole and set in pan of hot water. Bake 30 minutes in 325º oven.
