1/2 lb shrimp, cooked, peeled and deveined
1 1/3 C corn kernals, frozen or fresh
1/2 C sweet red pepper, chopped OR red tomato, chopped
1/2 C green onions, chopped
1 Tbsp cider vinegar
1 Tbsp canola oil
1/2 tsp fresh basil, minced
1/2 tsp lemon juice
1/4 tsp sugar
1/4 tsp salt
dash cayenne pepper

Toss all ingredients together; cover and refrigerate for 1 hour. 2 servings
