6 medium-sized potatoes
4 strips bacon, cut in 1-inch pieces
1/4 cup onion, chopped
1/4 cup celery, chopped
1 chopped dill pickle
1/2 cup cider vinegar
1/4 cup water or stock
1/2 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon paprika
1/4 teaspoon dry mustard (optional)

Cook potatoes in their skins in a covered sauce pan until tender. Peel and slice while warm. Cook bacon until crisp, reserve. Cook onion and celery in bacon drippings. Add pickle. Add water or stock, vinegar, sugar, salt, paprika, and dry mustard (if using), and heat to boiling point. Add potatoes and bacon, stir gently, and heat through.
