1 1/2 cups chopped onion (2 medium onions)
2 cloves garlic, minced
1 1/2 medium green peppers, chopped
1 cup celery, finely chopped
4 tablespoons butter
2 8-ounce cans tomato sauce
1 cup water
2 bay leaves
1 teaspoon salt
2 teaspoons fresh parsley
1/4 teaspoon cayenne pepper
1 pound shrimp, small to medium
1 pound fresh mushrooms, sliced, or 1 8-ounce can

Directions:
Directions:
Saute onion, garlic, green pepper, and celery in butter for about 5 minutes, or until tender. Remove from heat; stir in tomato sauce, water, bay leaves, parsley, salt, and pepper. Simmer 10 minutes. Add additional water, if needed. Add shrimp. Bring to a boil; cook covered over medium heat for 5 minutes. Adjust the seasonings. Serve with rice.
