1. Chocolate-Peppermint Candy Frosting
Vanilla butter frosting :
1 cup butter softened
2 (16oz) package powdered sugar
1/3 cup milk- Watch the milk for thick consistency
1 T. vanilla
For topping of cupcakes:
1 (12 oz) package white chocolate chips
1/2 cup crushed peppermint candy

2. Cream Cheese-butter Pecan frosting:
2 cups chopped pecan
1/4 cup butter, melted
2 ( 8 oz) packages cream cheese, softened
1/2 cup butter, softened
2 (16 oz) packages powdered sugar
2 t. vanilla

3. Coconut-Pecan Frosting:
1 (12oz) can evaporated milk
1 1/2 cups sugar
3/4 cup butter or margarine
6 egg yolks
1 1/2 t. vanilla
2 cups chopped pecans, toasted
1 1/2 cups sweetened flaked coconut

For Chocolate-Peppermint Candy frosting:
Vanilla butter frosting
Beat butter at medium speed with electric mixer until creamy; gradually add powdered sugar alternately with milk beating at low speed until blended after each addition. Stir in vanilla.
Melt white chocolate chips in a microwave-safe bowl at High for 30 second intervals until melted ( about 1 1/2 mins total). Stir until smooth, and spread in a 1/4 inch thick layer on a foil-lined baking sheet. Sprinkle evenly with peppermint candy. Chill 30 mins. or until firm. Remove from baking sheet and break into small pieces to decorate top of cupcake or cake.

For Cream Cheese-Butter Pecan Frosting
Stir together chopped pecan and 1/4 cup melted butter. Spread in a even layer in a 13X9 baking pan. Bake at 350º F for 15 mins. or until pecans are toasted. Remove from oven and let cool.
Beat cream cheese and 1/2 cup butter at medium speed with electric mixer until creamy. Gradually add powdered sugar, beating until light and fluffy. Stir in pecans and vanilla. Frost cake or cupcakes.

For Coconut-Pecan Frosting
Stir together first four ingredients in a heavy 3- quart saucepan over medium heat: bring to boil, and cook, stirring constantly for 12 minutes. Remove from heat: add remaining ingredients, and stir until frosting is cool and of spreading consistency.
