1 lg. pkg. chicken (bone-in or boneless)
2 cans fiesta nacho cheese sauce
1 green pepper (cut and seeded)
1 onion (chopped)
1 pkg. corn tortilla's
1 lg. bag mozzarella cheese
2 jalapeño;s (cut and seeded)

Directions:
Directions:
Boil chicken until done and then shred in a bowl. Put nacho cheese sauce in bowl and mix with almost full can of milk (use the cheese sauce can). Don't use full can of milk as you don't want the sauce too thin. In frying pan, combine chicken, green peppers, onion and a small amount of nacho cheese sauce. Cook until vegetables are soft. In a separate frying pan, heat small amount of oil and cook tortilla shells one at a time for about 3 seconds on each side. Place them on a paper towel lined plate to drain. Add 1 tbsp. of chicken mix to one end of the tortilla, not too much as it will be hard to roll. Roll shells together. Add small amount of cheese sauce to 9x13 baking pan then line the bottom with the rolled chicken tortilla shells. Cover the shells with remaining cheese sauce and sprinkle with mozzarella cheese. bake at 350º until cheese sauce is bubbling. Serve hot.
