1/4 cup vinegar
1/4 cup water
1/3 cup sugar
1/4 tsp. salt
pepper
1 tsp. yellow prepared mustard
2 eggs (beaten)
1 cup salad dressing (mayo type)
5 pounds small real potatoes (cooked)
1 medium onion (chopped)
1 medium green pepper (chopped)
2 hard - cooked eggs (sliced)

Directions:
Directions:
Combine vinegar, water, sugar, salt, pepper and prepared mustard in saucepan on medium heat until sugar dissolves. Gradually add beaten eggs, stir quickly until thickened. Remove from stove top and add salad dressing.
Chop potatoes, combine gently with onions and green peppers. Add sauce to potatoes and top with sliced eggs.
