Tri-tip roast
1/2 oz. or a little more of good-quality vodka
2 garlic cloves pressed
3 Tbsp. fresh sage
1/2 Tbsp. fresh thyme
Kosher salt
Fresh ground pepper

Directions:
Directions:
Combine all ingredients and marinate for two days.

Heat oven to 350º.

Sear the steak in a hot pan (preferably with grill marks) for about 7 minutes, turn and sear about another 7 minutes. Put pan in oven and bake for 15-20 minutes. Let sit 5 minutes and carve.
