4 Tbsp. unsalted butter (2 oz.)
2 large egg yolks
1 Tbsp. lemon juice
1/4 c. heavy or whipping cream

1/2 tsp. Dijon mustard
salt to taste

Directions:
Directions:
Place butter in 2-cup glass measure and microwave, uncovered, on high for 30 seconds. Remove butter from microwave and stir until completely melted. (Add another 30 seconds if necessary.)

Beat egg yolks well with whisk. Add egg yolks, lemon juice and cream to melted butter. Stir well.

Microwave mixture, uncovered, on high for 1 minute, stirring every 15 seconds with fork. When ready, sauce will be just slightly thick (60-90 seconds).

Remove sauce from microwave and stir in mustard and salt. Cover with plastic wrap until ready to serve.

This is fast, easy, and very good. You can refrigerate it and reheat it with two 30-second bursts in the microwave.
