Juice of 3 lemons
Rind of 1 lemon
4 eggs, separated
1 cup sugar
1/4 cup cold water
1/4 cup boiling water
1 pkg Knox gelatin

Directions:
Directions:
Put 1/4 cup cold water over gelatin. Dissolve with 1/4 cup boiling water.
Cream yolks of eggs with 1/2 cup sugar. Add lemon juice and rind. Cook in double boiler until thick. Add dissolved gelatin. Mix well then set aside to cool.
Beat egg whites with mixer until stiff. Add 1/2 cup sugar. Beat until stands in peaks. Add 1/2 tsp vanilla and fold yellow mixture into egg whites. Pile on lightly in baked pie shells. Top with whipped cream (make designs with fork in whipped cream)
