1/4 cup sugar
1/2 cup Splenda
1 T cornstarch
1/4 t salt
1/2 t cinnamon
2/3 cup water
3 cups fresh or frozen blueberries, divided
1 1/2 t lemon juice
9 or 10 inch pie crust, baked (I often use a graham cracker crumb crust.)


Directions:
Directions:
1. Combine sugar, Splenda, cornstarch, salt and cinnamon in a medium saucepan.
2. Blend in water and 1 cup blueberries. Bring to a boil, cook, stirring constantly, until mixture is very thick.
3. Remove from heat and stir in lemon juice. Cool.
4. Fold in remaining 2 cups of blueberries.
5. Pour into baked pie shell. Chill 2 hours.
