1 tablespoon butter for greasing pan
5 large sweet potatoes, peeled and thinly sliced
1 to 1 1/4 cups each: all-purpose flour and granulated sugar
3 cups whipping cream
1/2 teaspoon cinnamon
2 tablespoons brown sugar
Sugar Mixture (recipe follows)

Preheat oven to 350 degrees. Grease a 13-by-9-by-2-inch pan with butter. Arrange one-fifth of the
sweet potatoes in a single layer in pan. Top with one-fifth of the flour and sugar. Repeat for 4 more layers. Mix cream,cinnamon and brown sugar. Pour over potatoes. Top with Sugar Mixture. Cover and bake 1 to 1 1/2 hours (check at 1 hour).
Uncover for the last 15 to 20 minutes of baking time.

Sugar Mixture
1 tablespoon each: granulated sugar and brown
sugar
1/4 teaspoon ground cinnamon
1/2 teaspoon vanilla
1 tablespoon softened butter
1/4 cup all-purpose flour

Combine sugars, cinnamon, vanilla, butter and flour;
mix until crumbly.
