Sorbet
8 cups seedless watermelon chunks
1 cup sugar
Juice of 2 lemons

Granita
5 cups diced watermelon pulp (about a 6 pound whole melon) seeded
1/3 cup sugar
1/4 cup fresh lime juice
2 teaspoons fresh grated lime zest
1/4 cup sweet white wine such as Riesling

Sorbet
Combine all ingredients in a food processor. Purée until smooth, then strain. Pour into sorbet maker and freeze according to instructions.
For a granita, pour into a shallow, wide pan and freeze for 1 hour. Rake mixture with fork and freeze for another hour. Rake and freeze for one more hour. Rake and serve.
Granita
Puree watermelon until smooth and set aside. In a small saucepan add sugar, lime juice, zest and wine and simmer just until sugar melts. Off heat, cool and add to puréed watermelon.
Pour purée into ice cube trays and freeze until solid. To serve, place frozen cubes in the bowl of a food processor and pulse 9 or 10 times until very finely chopped but still frozen. Serve immediately.
