1 pound fresh mushrooms (large ones, if possible)
2 tablespoons blue cheese
2 strips bacon, crisp fried and crumbled
2 tablespoons butter
1 teaspoon lemon juice
1 cup (2 to 3 slices) fresh bread, torn into bits
Salt to taste

Directions:
Directions:
Remove stems from mushrooms, chop stems for stuffing. Heat butter and sauté mushrooms stems about 2 minutes. Add crumbled blue cheese, lemon juice, soft bread pieces and a little salt. Stir until combined. Spoon 1 tablespoon stuffing into each cap. Place in roasting pan. Bake at 350° for 15 minutes. Can be prepared ahead (without baking) and refrigerated, and baked just before serving.
