Brazilian-style Beef Recipe

3 T. oil
2 lbs beef, cut into strips
3 onions, thinly sliced
1 garlic clove, crushed
1/4 c. flour
3/4 c. beef broth
1-1/2 to 2 tsp instant coffee powder
3/4 c. boiling water
1 16-oz can tomatoes
pinch of ground nutmeg (1/2 tsp or more)
2 tsp dark-brown sugar
salt and pepper

Heat oil in flameproof casserole. Add the beef strips and fry quickly until browned. Lower the heat and add the onions and garlic. Cook until softened.

Sprinkle in the flour and continue to cook, stirring, for 1 to 2 minutes. Gradually add the stock (broth). Dissolve the coffee in the water and add with the tomatoes and their juice, the nutmeg, brown sugar, and salt and pepper to taste.

Bring to simmering point, then cover and transfer to a preheated 325F oven. Cook for two hours.

Serve with buttered noodles and a green salad.
