CRUST:
1 c. butter, softened
2 c. flour
1/2 c. powdered sugar
salt to taste
FILLING:
2 c. granulated sugar
1/4 cup flour
4 eggs, beaten
6 T. fresh lemon juice

Directions:
Mix crust ingredients well. Press into a 13x9-inch lightly greased baking dish. Bake crust at 350º for 15 minutes or until lightly browned.

For Filling: Combine granulated sugar and flour. Mix in eggs and lemon juice. Pour into cooled crust. Bake at 350º for an additional 25 minutes or until set. Cool. Sprinkle with powdered sugar. Cut into squares. Keep refrigerated in airtight container. Can also be frozen.

For a zestier bar, add 1 tsp grated lemon rind to filling mixture. These homemade lemon bars are so much better than any "box mix" and they are almost as easy to make.
