3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp lemon juice
3/4 c. flour
1 tsp. baking soda
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt
1 c. chopped pecans (opt)
Powdered Sugar

In large mixing bowl, beat eggs on high speed for 5 minutes. Beat in sugar, then add pumpkin and lemon juice. In separate bowl, combine flour and spices; fold this into pumpkin mixture. Spread evenly on greased and floured jelly-roll pan. Sprinkle with chopped pecans. Bake at 350 for 15 minutes. Remove from oven, loosen edges immediately and turn out onto LINEN dishtowel. Roll up, starting with long side and let cool. When cool, unroll and spread evenly with filling and roll back up. Sprinkle with powdered sugar.
1 c. powdered sugar
2 (3oz.) pkgs. cream cheese, softened
4 tbsp. butter
1/2 tsp. vanilla
Mix all ingredients until smooth
