Ingredients:  
- 1 tsp - unsalted butter
- 1 onion - chopped
- 1 1/2 cups - low sodium beef broth
- 2 oz - French bread cut into 2 slices, toasted
- 1/3 cup - part skim mozzarella cheese

Directions:
Directions:
- preheat broiler

- In a medium saucepan melt butter
- add onion, cook until softened, approximately 5 minutes
- add broth, bring to a boil
- reduce heat simmer 3 minutes ( you may add a splash of red wine if you wish)
- place one slice of the toast each into 2 flame proof bowls
- pour soup over bread
- sprinkle cheese on top
- melt cheese under broiler till lightly browned, 1 minute
- serve
