Banana Bread Recipe

2 eggs

2/3 c. cooking oil
2 c. sugar
3 bananas (mashed)
2 tsp. vanilla

2 c. all-purpose flour
1/4 tsp. salt
1/2 tsp. baking powder
1 tsp. soda
1 tsp. allspice
1 c. pecans (optional)


Beat eggs until light and fluffy.

Add oil, sugar, bananas and vanilla. Combine dry ingredients and nuts; fold in.

Bake in sprayed Bundt pan at 375 for 45 minutes.

Helpful hint: Freeze whole bananas. When time to use, cut off one end of banana and microwave. Push banana out of skin and mash to use in bread.
