2 large sweet onions
1 egg, lightly beaten
2/3 cup water
1 T. vegetable oil
1 tsp. lemon juice
1 cup all-purpose flour
1 1/2 tsp. baking powder
1 to 1 1/4 teaspoons salt
1/8 tsp cayenne pepper
cooking oil for deep-fat frying

Cut onions into 1/2 inch slices; separate into rings. Place in a bowl; cover with ice water and soak for 30 minutes. Meanwhile, combine egg, water, oil, and lemon juice in a bowl; mix well. Combine flour, baking powder, salt and cayenne; stir in to egg mixture until smooth. Drain onion rings; dip into batter. In an electric skillet or deep-fat fryer, heat 1 inch of oil to 375º. Fry onion rings, a few at a time, for 1 to 1 1/2 minutes per side until golden brown. Drain on paper towels. Onion rings may be kept warm in a 300º over while frying remainder of batch.
