Ingredients:  
4 flats of tomatoes or enough to fill my stock pot 3/4 - 7/8 full.
7 peaches or a can of crushed pineapple
10 jalapeno peppers, chopped and seeded
cilantro chopped
1 1/2 cups apple cider vinegar
2 T. Salt
1 cup sugar
1/2 cup - 1 cup minced garlic
4 onions, chopped

Directions:
Directions:
Add all ingredients, except salt, vinegar and sugar at the end) to the pot. Cook til reduced to 3/4 pot or less and thickened and add last 3 ingredients. Can in pints. Makes about 22 pints.

Austin absolutely loves this salsa. I make around 50 quarts a summer and run out each August or before. Tim doesn't like fruit in his salsa, so I usually make some of each.
