1 whole head cauliflower
2 T. butter
2 T. flour
1 cup milk
1/2 t. salt
1/4 t. pepper
2 hard cooked eggs, chopped
2 T. pimento
3/4 cup chopped green onion
3/4 cup buttered bread crumbs
2 T. grated cheese

Directions:

Cook whole cauliflower in one inch salted boiling water for 20 minutes. Remove and cool. Melt butter, add flour and gradually stir in milk. Cook until smooth and thick. Add seasonings, egg, pimento and onion to sauce. Preheat oven to 375º.
Place cauliflower in buttered pie pan. Remove top of cauliflower and fill center with sauce and replace top. Pour remaining sauce over cauliflower and sprinkle with crumbs and cheese. Bake for 30 minutes.

This recipe may sound a little strange and time consuming; but, if you like cauliflower you will love this. I have been making it for years.
