Chicken Pot Pie Recipe

1/2 c. chopped onion
6 T butter
7 T flour
1 t. salt
1/4 t. poultry seasoning
1/8 t. pepper
3 c. chicken broth
3 c. cubed cooked chicken
1 10oz pkg frozen peas and carrots
1 roll refrigerated pie crust

Directions:
Directions:
Cook onion in butter until tender, add flour, salt, and seasonings. Stir while cooking until thickened. Add chicken, peas and carrots. Simmer 5 minutes. Pour into 9x13 baking dish.
Take pie crust and cut into 1" strips, laying across the top. Take smaller ends and lay them end to end in the pan.
Bake at 400º for 10-15 minutes. (or whatever temperature your crust recommends for baking, when done it will be lightly browned and bubbly)
