2 lb. lean hamburger
1 c. seasoned Italian breadcrumbs
1/2 c. Romano cheese
1/2 c. Parmesan (No Kraft© please!)
2 t. kosher salt
1 t. freshly ground black pepper
1 t. granulated garlic
1/4 c. dried parsley

Keep ground beef very cold. Fold all ingredients together gently with your hands just until combined. Scoop even amounts with desired size ice cream scoop and roll gently into a ball. Do not pack tight.

Meatballs may be cooked in spaghetti sauce, poached in 1" of water, or baked on parchment paper at 350º.

Cooking time depends on the size. Cook until internal temperature reaches 160º.

If meatballs are packed too firmly, or handled too much they will become tough.
