8 slices of bacon, cooked and crumbled
1 bag of clean, dry baby spinach
1 small red onion, sliced
4 large button mushrooms, sliced
2 hard boiled eggs, sliced

Dressing:
3 T. bacon drippings
3 T. red wine vinegar
1 t. sugar
1/2 t. Dijon mustard
1 t. Kosher salt
1 t. freshly ground black pepper

Directions:
Directions:
In a large metal mixing bowl over medium heat on the stove, whisk together the bacon drippings, vinegar, mustard, salt and pepper. Remove from heat.

Place remaining ingredients into the bowl and toss gently. Serve immediately.
