1 1/2 pounds ricotta cheese
1/2 cup grated italian cheese
1/2 teaspoon pepper
1/2 cup parsley
3 eggs
Spinich Hamburger Filling:
1/2 pound ground veal
1/2 pound ground pork
1/2 pound ground beef
salt and pepper to taste
1 pound chopped spinich

Beat eggs, add other ingredients, and mix well. Roll out dough and spread egg whites on it. Spread ricotta dilling and cut into squares with a pastry cutter.
