2 pounds lean hamburger (93% fat free is best)
½ teaspoon chopped -or minced garlic
1 - 2 tablespoons olive oil
Salt & black pepper to taste
½ green pepper cut in ½" squares
15 ounce can Hunt’s tomato sauce
¼ -½ teaspoon oregano - dried
¼ teaspoon basil - dried
¼ cup grated cheese (Romano -or- Parmesan)
½ teaspoon sugar

Form hamburger into 6 miniature meat loaves about 1/3 lb each. Place in cold pan with olive oil, season with garlic, salt and black pepper and brown on one side. After flipping to cook on other side, add green peppers to frying pan. While meat is cooking, mix tomato sauce, oregano, basil, sugar and salt and pepper. When meat is cooked and running clear add sauce. Sprinkle liberal amount of grated cheese on each hamburger. adjust seasoning. Cover and simmer for anywhere from 1½ to 2 hours.

Notes: If using own spaghetti sauce eliminate the sugar.

Serving suggestions: Mashed potatoes and boiled green beans drained and sautéed in olive oil with garlic and black pepper. The presentation looks great on the plate and has the colors of the Italian flag.

History: After we were old enough, Mom would let my sister and me start dinner. This was one of the dishes we could start after we got home from school and it could simmer until my father got home from work.
