lg Baking Potatoes (1 for each person)
Margarine or Butter
Chives or Green Onions (optional)
Crumbled Bacon
Mild Cheddar Cheese
Sour Cream
Lawry's Seasoned Salt
Jalapeños (optional)

Directions:
Directions:
Wash Potatoes, Poke with a fork, Microwave until completely cooked. Let Cool to handle. Preheat Oven to 375º. Cut top off potatoes longways (can also be cut in half to make 2 smaller ones). Using a Tablespoon, into a large bowl scoop most of the potato out of the skin, leaving enough to keep the skin intact. Add all other ingredients in amounts as desired due to your taste, fold together... do not blend. Scoop mixture into shells and place on a baking sheet. Sprinkle with additional Seasoned Salt. Bake at 375º for 45mins to 1 hour.


This recipe is Dedicated to my Husband Heath Melton. It is one of his favorites. Heath was instrumental in the production of this cookbook, as he personally typed most of the recipes in. (Please don't blame him for any errors, as he worked very hard into some crazy hours). Heath has always supported me and HSC in many volunteer projects and activities from setting up tents and cooking at the ACS Relay, decorating and setting up the Kids Jamboree's, and now typing in recipes.
