4 cups chopped apples (coarsely chopped)
2 cups sugar
2 eggs
1/2 cup vegetable oil
2 tsp. vanilla
1 tsp. salt
2 cups sifted All-purpose flour
2 tsp. baking soda
2 tsp. cinnamon
1 cups walnuts ( any favorite nut can be used)


LEMON BUTTER FROSTING

4 tbsp. butter or margarine
3 C. confectioners sugar
2 tbsp. lemon juice
1 or 2 tbsp. cold water
few grains of salt

Apple Walnut Cake directions:
Combine apples & sugar, let stand.
Beat eggs slightly; beat in oil & vanilla.
Mix & sift flour, soda, cinnamon & salt; stir in alternately with apple-sugar mixture.
Stir in walnuts.
Pour into greased & floured oblong pan 13x9x2 inches.
Bake at 350 degrees about 1 hour, or until cake test is done. Frost with Lemon-Butter frosting.

Lemon Butter Frosting directions:

Cream butter or margarine; add sugar gradually.
Creaming thoroughly, beat in lemon juice & enough cold water to make a spreading consistency.
Beat in salt, spread on cake.
Decorate with walnut halves.
Icing makes: 3 1/2 cups of frosting
